The most popular of the winter squashes. Butternut squash has a buff colored rind with fine-textured, sweet orange flesh, that is creamy and rich. This fruit stores superbly, lasting sometimes 6 months or even longer (I still have good ones in my refrigerator grown last fall!). Vigorous and dependable, this vining squash is also a great source of fiber, vitamin C, magnesium, and potassium. Great for steaming, boiling, baking, or even harvest young and use as a summer squash.
